I love soup and could eat every day. But I do not always have time for a big pot of soup is boiling, that hour for. I have some soup, which can be done in a few minutes or found without much work. CHEESE-Bean Chowder

3 (15-oz pieces) cans navy* Beans, drained
2 cups water
1 med onion, chopped
1 stalk celery, chopped
2 teaspoons instant beef bouillon granules
1 / 2 teaspoon dried basil, crushed
1 bay leaf
2 cups milk
1 jar (8-oz) pasteurized process cheese spread
chopped fresh parsley for garnish, optional

In a large skillet or Dutch oven, combine drained beans, water, onion, celery, bouillon granules, basil and bay leaves. Bring to a boil. Reduce heat and simmer, covered, for 20 minutes. Discard bay leaf.Mash beans slightly prick with a fork. Disseminate Stir in milk and cheese. Cook and stir until process cheese spread melts and the soup is heated through. Ladle into soup bowls and garnish with parsley, if desired.

Frying Cheese Soup

1 / 4 cup butter
2 carrots, chopped
1 stalk celery, cut into thin slices
1 tsp dried onion flakes
1 / 4 cup flour
1 / 8 teaspoon freshly ground blackPepper
4 cups milk
8oz smoked sausage, sliced
2 cups cubed Velveeta-style cheese

In a large saucepan melt the butter. Add the carrots and celery, butter, and cook until soft, add the onion flakes. Stir in the flour and pepper until blended. Add the milk stirring as you pour it on, add the sausage to the mixture. Cook and stir soup over medium heat 8 to 10 minutes, until it thickens and bubbles. Cook and stir for another minute. Add the cheeseto the mixture and continue cooking, stirring constantly, until cheese is melted.
