One of my favorite soups, potato soup. I like almost any way you can make it. But since I've become diabetic, I goooood about too much of the stuff with care! Here is a recipe that is hearty, tasty, and we diabetics can enjoy it with a little luck, people who are not diabetic! Try this delicious soup soon. This ham and red potato soup has the added protein from the ham, together with the milk to make it diabetic friendly.
HAM & RED POTATO>SOUP

1 lb red potatoes (approx. 8 small) scrubbed and cut into cubes
2 cups water
1/2 tsp salt
1/4 cup butter
3/4 cup chopped celery
1/2 cup chopped onion
2 medium carrots, finely chopped
3 tbsp all-purpose flour
3 cups milk
3/4 tsp salt
1/4 tsp pepper
1/8 tsp thyme
Place potatoes, water, and 1/2 tsp salt in a 2-quart saucepan. Heat to boiling. Reduce heat to simmer, cover pan, and Boil until the potatoes are soft, about 10 to 15 minutes. Drain.
In the meantime, melt in a large pan of butter over medium heat. Add celery, onions and carrots. Cook, stirring vegetables until they are soft. Stir in flour and stir well to mix. Add the mixture to the potatoes in the pot. Stir in milk, 3 / 4 teaspoon salt, pepper and thyme. Cook and stir over medium heat raises blisters.
