So you got that garden and grows like a weed. They planted their Beefeater and the juicy tomatoes peppers do well. Your squash begins to take shape and oh my! The lettuce plants are already mature and ready for picking.
Take a quick look at the garden and begin to wonder what in the world you are with all that will do salad. Now let me tell you, is not only eating lettuce in a salad, or maybe on a sandwich. This beautiful green energyBoaster is also excellent in soup. The variety is mainly Romaine flavor in a recipe that I can imagine now. This recipe is the instruction for the preparation of salad and herb soup.
You can be adventurous and try different types of lettuce but I want you to use caution, iceberg, because it contains far too watery and not much taste the soup.
Ingredients
1 tablespoon butter
6 spring onions cut into thin strips, only the whitePart
3 cups chicken broth
9 cups chopped romaine lettuce variety
2 tbsp chopped parsley
3 tablespoons mixed herbs with basil, chives, chervil, celery leaves and thyme
2 cups whole milk
Egg yolks, 1 egg
3 / 4 teaspoon salt
Black pepper to taste
Freshly grated Parmesan or Romano cheese
Step by Step
1. Do spend a large pot and heat it on medium heat until the butter has melted
2. Now addand fry the shallots
3. Cook and stir 3 minutes until soft mass
4. Add the chicken broth and bring mixture to a rapid boil
5. Add lettuce and cover
6. To wilt let simmer for 5 minutes until the lettuce starts
7. Parsley and herbs
8. Puree the mixture with a blender finished
9. Simmer the pureed mixture over low heat
10. In a separate bowl, whisk together milk and egg yolks
11. When whisking add some of the heatedsoup together with the egg
12. Pour the whisked egg into the pot of soup
13. Simmer over low heat until thick
14. Season with the salt and black pepper
Your family is sure to enjoy this different dish especially when you sprinkle some Romano cheese on top of it. Serve this dish while it is hot. Now you know what to do with all your extra lettuce.
