1 teaspoon chicken-flavored bouillon granules
1 cup water
1 cup fat-free milk
1 / 4 cup shredded low-fat process American cheese
2 teaspoons DijonMustard
In a medium saucepan, combine thawed vegetables and onion. In a small mixing bowl, flour, Italian herbs, salt and pepper, stir well to mix. Add flour mixture to vegetables and stir to coat well. Dissolve bouillon granules in water and milk into the saucepan and bring to a boil. Cook, stirring constantly 5 minutes or until mixture is thickened and begins to bubble. Reduce heat to low and add cheese and mustard, stirring to mix. Serve immediately.
Serves 61 cup each. Per serving: 80 calories, 12 g carbohydrates, 5 g protein

This is an old Old Order Amish recipe.
1 / 4 cup chopped onion
3 tablespoons butter
1 / 4 cup flour
2 cups milk
1 cup chicken broth
1 / 2 cup shredded carrots
1 / 2 cup chopped celery
3 / 4 cup boiling water
1 1 / 2 cups shredded Cheddar cheese
Cook carrots and celery in boiling water until they are soft. Do not drain. Melt butter, place in large pot and add onions, cook until soft. Flour and mix well. Gradually add the milk and chickenBroth. Add the carrots and celery. Cook, stirring, until thickened. Stir in the cheese and stir over low heat until the cheese is melted.

SYRIA EGGPLANT STEW
I had this recipe years ago from a lady in Ft. Worth, Texas area. It was an old family favorite Syrian grandmother had made for her.
1 large eggplant
3 or 4 cloves of garlic
1 / 3 cup olive oil
1 large onion, coarsely chopped
2 cans tomatoes
1 cupWater
Salt and pepper to taste
1 tablespoon fresh parsley
1 tablespoon capers, rinsed
1 / 3 cup Greek olives, pitted
Prepare this dish in a large, heavy Dutch oven.
Peel garlic and mash. Eggplant into cubes and lay down on a clean dish towel. Salt eggplant and let sit for 10 minutes. The olive oil in Dutch oven. Saute garlic in a medium-hot oil until it just begins to brown, remove from the pan. Add the eggplant in the pan and saute for 10 minutes. The Onionand fry for another 10 minutes or until onion is always soft. Add the tomatoes and water. And additional salt and pepper to taste. Simmer mixture for 30 minutes over low heat. Add the capers and olives. Add the parsley just before serving.
Note: Serve a hot crusty bread with this dish. Again, this dish is great as leftovers.
